This version of roast chicken is very Asian in taste. The addition of soy sauce and lemon juice lends its tasty and tangy flavor, and the use of lemongrass in the insides of the chicken gives it a wonderful aroma. The use of Asian ingredients also rounds out its exotic quality. You can find the other ingredients for this dish in an Asian store and this dish is a wonderful substitute for Thanksgiving turkey. This dish could also be prepared ahead of time and could be popped into the oven an hour before the gathering.

Ingredients of Asian Roast Chicken:

  • 1 whole chicken, cleaned
  • 8 tablespoons of dark soy sauce
  • 1 tablespoon of salt
  • 1 tablespoon of sugar
  • 1 teaspoon of Asian chili sauce
  • Juice of 2 lemons
  • 1 bunch of lemongrass, cleaned
  • Pepper to taste

How to Make Asian Roast Chicken

  1. Clean the chicken and rub it with salt.
  2. Clean the lemongrass and tie it up in a neat bundle. Put it inside the chicken cavity.
  3. In a mixing bowl, add the dark soy sauce, lemon juice, chili sauce, sugar, and pepper. You can adjust the following ingredients to suit your taste. This combination would give you a tasty chicken that is perfect for steamed rice. If this is too salty for you, you can reduce the dark soy sauce.
  4. Use a syringe to inject the chicken with the marinade. Thicker parts such as the breast and the thigh should be injected with more marinade mixture. Set aside a part of the mixture to marinate the chicken with.
  5. Use the remaining part of the mixture to marinate the chicken. For best results, you should marinate the chicken overnight. If you are in a hurry, marinating for two hours can do.
  6. Preheat an oven or turbo broiler to about 200 degrees Celsius for five minutes. Roast the chicken for about 30 to 40 minutes, or until the insides are done.
  7. You could use the drippings as gravy. Add water with a half-teaspoon of cornstarch in a saucepan with the drippings. Bring to a boil, and serve the gravy hot. The gravy should not be left for more than three hours. Do not refrigerate the gravy. Any remaining gravy should be thrown away. The reason for this is gravy spoils easily.
  8. Serve the chicken with steamed rice.
